Fresh Herb Chicken Salad
So I’m currently in the middle of my third Whole30 journey. I’m at the point where I’m starting to feel a little food boredom so I need to keep things interesting! I love making different versions of chicken salad when I’m doing a Whole30 because I can eat it in a variety of ways. As a dip with celery or carrot sticks, on mini sweet peppers or cucumber slices as “crackers”, a lettuce wrap, or just eating some straight out of the bowl! There is chicken salad recipe that I have adapted over time that I use and love all the time but I was looking for something different.
Before this round of Whole30 started, I was at the grocery store and saw a bunch of different pre-made chicken salads and picked one up to try. It was SO GOOD! The problem was it contained sugar and was too “saucy” for my liking. So it dawned on me…make your own version!
I love this Fresh Herb Chicken Salad because it reminds me of the fresh flavors of summer. And let’s be real…I’m holding onto every last bit of summer right now. It’s super easy to throw to together. Fresh Herb Chicken Salad
Ingredients:
3 cups shredded chicken
Juice of one lemon
1/2 cup mayo (I used Primal Kitchen’s to keep it Whole30 compliant)*
1 tsp salt
1 tsp pepper
1/8 cup chopped fresh tarragon*
1/8 cup chopped fresh chives*
1/8 cup chopped fresh parsely*
2 stalks celery, diced
1/3 cup diced red onion
Directions:
- Mix all ingredients in a bowl. Done! Super easy :)
Notes:
* If you like your chicken salad more “saucy” feel free to add more mayo until it is the consistency you prefer.
* If you are a big fan of fresh herbs, up them to 1/4 cup! I’m obsessed with tarragon so I’m always adding more!
Sweet mini peppers are my favorite right now! I use them like a cracker or a chip :)
